The colored rings on the vertical rod indicate 3 degree increments starting from 15 degrees, allowing for easy angle setting.
The Lansky Knife Sharpener proves to be a reliable tool for both beginners and experienced knife enthusiasts alike. If you’re doing sharpening on high end knives with modern steel you might want to pick up the 3 stone or 4 stone Diamond Kits, which come with another bottle of honing oil even though you’re not supposed to use it. You can choose from 4 fixed slots – 30, 25, 20 and 17 degrees depending on what you’re sharpening and how you want it to cut. They all have a molded “pinch grip” on the back with 4 separate spots where you can pinch the handle between your thumb and forefinger to hold it.The Roadie 8 in 1 keychain sharpener contains more useful features per square inch than any other sharpener in the world. It’s important to keep a thin layer of the honing oil on the stones – progressively less as you step up in grit, with just a tiny bit on the yellow ceramic 1000 grit stone – to avoid clogging it with metal shavings. If you have already sharpened that knife on the Lansky at your preferred angle, you can skip the black stone and sometimes you can even skip the red stone – although I still start with the red stone on knives I’ve already sharpened.
Two guided rods on heim joints are set with an ultra-precise dial to the exact angle you want, and you swipe them across the edge one after another in repeat. For knives, and knife sharpening systems that are affordable, but will get the job done, Lansky is the brand for you.Where the Lansky has wide slots for the rods to pass through to set the angle, the KME uses a spherical ball bearing rod guide. Sharpening with the Lansky Knife Sharpener involves removing metal from the blade’s edge to create a new, sharp edge. The closure on the front of the box is a little difficult to connect, but to be honest I didn’t find this an issue as I brought the kit to work and it’s stayed there. A series of progressively finer grit stones attach to rods which pass through angled slots and create a repeatable angle on the edge bevel of the blade. The honing rod or leather strop realigns the microscopic burrs and ensures a smooth, fine edge on the blade.
