Alright, here’s what you need to know. Both the Marcato and Imperia are excellent pasta makers. I recommend both of them! The machine comes with an attachment to secure it to a worksurface and that's the best way to have it. It makes sure it's steady which is important as you turn the handle so that you have a free hand to deal with the pasta coming out. Bring a pan of water to a rolling boil and add the pasta. Adding salt isn't done in Italy - the taste of home-made pasta is so delicious you really don't need it.
